Christmas Sauce / Hard Sauce
Total time: ~30 minutes
Servings: 6-8
Ingredients:
1/2 cup butter
1 cup sugar
3 egg yolks
1 1/2 cup cream (or canned milk)
1 pinch salt
3/4 teaspoon vanilla
Instructions:
1. Cream butter with sugar in the bowl of a double boiler.
2. Add well-beaten egg yolks and then the cream.
3. Add pinch of salt and stir well over low heat until it thickens slightly like cream. (DO NOT OVER COOK or it gets too thick). This sauce should be stirred constantly while cooking. DO NOT BOIL.
4. Add vanilla after you remove it from the stove.
Notes: The use of a double boiler helps to not overcook and to prevent the sauce from getting too thick. I like to add some orange zest and juice. This custard sauce goes well with Adele's Apple Pudding. We also used to eat it on ice cream. This sauce is also known as Custard Pudding Sauce.
