Grandpa's Homemade Stuffing

 

Homemade stuffing

Total time: 1.5 hours

Yield: 12 servings

Ingredients:

12 cups white bread

2 sticks butter

1 1/2 cups celery, finely chopped (~3 stalks)

3/4 cup onion, finely chopped

2 TB salt

1 tsp freshly ground pepper

1 TB dried sage, crushed or 1 tsp fresh sage

Instructions:

1. Break bread as fine as you desire. Place in a large bowl and allow to dry out if in a dry climate like Utah or spread on a cookie sheet and bake at ~250F for ~30 minutes if in a humid climate.

2. Melt butter in a large heavy skillet. Add onion and celery and cook until golden. Stir in the herbs and some broken bread. Turn into the bowl of bread. Mix in lightly. Add the rest of the butter to the large bowl and stir.

3. For dry stuffing, add little or no liquid. For moist stuffing, stir in just enough hot water to moisten the dry bread. Place in a casserole pan and cover with aluminum foil. Bake 30 minutes then remove the foil and bake for 15 minutes.
