Gluten Free Quiche (No Crust!)

Active time: 10 minutes
Servings: 4-6
Ingredients:
1 onion, chopped
2 handfuls fresh spinach or kale
1/2 cup mushrooms, chopped
6 eggs
1-3 cups grated cheese or 1 cup whole milk or heavy cream
1/8 tsp ground pepper
1/2 tsp kosher salt or sea salt
4 strips bacon (optional)
1 TB butter or avocado oil if not using bacon
Instructions:
1. Cook the bacon (if using) on the stove. Sauté the onion and mushrooms and spinach in the bacon grease or use butter or an oil like avocado oil if needed. Place these in a glass pie plate.
2. In a medium mixing bowl, whisk together the eggs, salt, pepper, cheese or milk or cream. Pour over the veggies in the pie plate.
3. Bake at 350 degrees for about 30 minutes until lightly browned and it doesn't jiggle in the middle.
Notes:
- You can use other veggies like sautéed broccoli, bell pepper, asparagus, etc.
- Mine doesn't stick to the pan since I use bacon but if you're worried you could grease/spray the pan first.
