Spaghetti with White Clam Sauce

Total time: 35 minutes Active time: 5 minutes

Yield: 6 servings

Ingredients:
1/2 cup butter (1 stick)
1 onion, chopped (or 1 TB onion powder)
2 cloves garlic, minced
1/3 cup flour
2 cups milk
2 cans (6.5 oz each) minced clams (or 1 can and 1 lb. fresh clams)
1/2 tsp minced basil leaves
1/2 tsp salt
1/8 tsp white pepper (or black)
2 TB minced fresh parsley (or 2 tsp dry parsley)
1 package (12-16 oz) spaghetti

Melt butter in a medium saucepan. Add onion and garlic, sauté until tender. Stir in flour. Slowly add milk, stirring constantly until sauce thickens. Drain clams and reserve juice. Add clam juice to sauce. Add basil, parsley, salt, and pepper. Simmer about 15 minutes. Add clams and warm through.

As sauce simmers, cook spaghetti until tender. Spoon clam sauce over spaghetti and top with parmesan if desired.

Note: It may not be the healthiest dish but it is a good way to introduce kids to seafood.
