Fried Potatoes
Servings: 2
Ingredients:
2 medium potatoes
1/3 cup chopped onion
2 TB vegetable oil (or bacon grease if you happen to have it)
seasoning salt (salt, paprika, turmeric, garlic powder, onion powder)
black pepper
sugar
garlic powder
2 eggs (optional)
Instructions:
1. Boil the potatoes first for about 25 minutes or use already baked/microwaved potatoes. Allow to chill and dry.
2. Slice or chop potatoes as desired. Peel if desired (I don't).3. Heat the oil in a frying pan and sauté the onion for 1-2 minutes, add potatoes.
4. Season and cook for 15 minutes, turning periodically but not too often to allow a nice crust to form.
5. Optionally fry two eggs when the potatoes are done.
