"Quick Cinnamon Rolls"

Total time: ~65 minutes Active time: 30 minutes

Yield: 12 rolls

Dough ingredients:

⅓ cup sugar

3 TB yeast

½ cup oil

1 ¼ cup warm water

2 eggs

1 ½ tsp. Salt

5 ¼ cup flour (Mom would sneak in 1 cup of whole wheat flour and about 3 3/4 cups white)

Filling ingredients:
¼ cup melted butter

½ cup sugar

½ cup nuts (optional)

1 ½ TB cinnamon

¾ cup raisins

Glaze ingredients:

2 cups powdered sugar

¼ cup hot water

1 TB melted butter

Instructions:

  1. In a large bowl, mix sugar, yeast, oil and warm water until dissolved. Cover and let stand in a warm place for 15 minutes.

  2. Blend eggs into yeast mixture. Add salt to flour then slowly add to yeast mixture for soft dough.

  3. Knead dough for 5 minutes on a lightly floured surface. Roll dough into a rectangular shape about ¼ inch thick.

  4. Brush dough with melted butter. Combine cinnamon and sugar. Sprinkle over dough then sprinkle raisins and optionally nuts. (Mom never added nuts)

  5. Carefully roll up dough to make a long tube. Cut 1 inch slices with a knife or thread. Do not cut thicker or they won't cook through. Place on an ungreased rectangular pan. Don't overcrowd. Let rest for 10 minutes.

  6. Bake at 425 for 10-15 minutes until golden brown. Mix sugar glaze and frost while warm.
