Mom's Cinnamon Rolls
"Quick Cinnamon Rolls"
Total time: ~65 minutes Active time: 30 minutes
Yield: 12 rolls
Dough ingredients:
⅓ cup sugar
3 TB yeast
½ cup oil
1 ¼ cup warm water
2 eggs
1 ½ tsp. Salt
5 ¼ cup flour (Mom would sneak in 1 cup of whole wheat flour and about 3 3/4 cups white)
½ cup sugar
½ cup nuts (optional)
1 ½ TB cinnamon
¾ cup raisins
Glaze ingredients:
2 cups powdered sugar
¼ cup hot water
1 TB melted butter
Instructions:
In a large bowl, mix sugar, yeast, oil and warm water until dissolved. Cover and let stand in a warm place for 15 minutes.
Blend eggs into yeast mixture. Add salt to flour then slowly add to yeast mixture for soft dough.
Knead dough for 5 minutes on a lightly floured surface. Roll dough into a rectangular shape about ¼ inch thick.
Brush dough with melted butter. Combine cinnamon and sugar. Sprinkle over dough then sprinkle raisins and optionally nuts. (Mom never added nuts)
Carefully roll up dough to make a long tube. Cut 1 inch slices with a knife or thread. Do not cut thicker or they won't cook through. Place on an ungreased rectangular pan. Don't overcrowd. Let rest for 10 minutes.
Bake at 425 for 10-15 minutes until golden brown. Mix sugar glaze and frost while warm.
