Peanut Brittle


Time: 30 minutes Active time: 15 minutes


Yield: 2 servings


Ingredients:

1 cup granulated sugar

½ cup light corn syrup + 2 TB

1 ¼ cup roasted salted peanuts

1 ½ tsp. butter (or margarine)

1 ½ tsp. vanilla

1 tsp. baking soda (use a fresh box for best results)


Instructions:

  1. Preheat the oven to 200. Place a buttered sheet pan in to preheat.

  2. Spray a liquid measuring cup with Pam and measure the corn syrup. In a medium glass mixing bow, stir the corn syrup and granulated sugar together. Microwave for 3.5 minutes.

  3. Stir the peanuts in and microwave for 3 more minutes until light brown.

  4. Add the butter and vanilla to the mixture and stir until well-combined.

  5. Have the baking sheet ready. Microwave for an additional 1.5 minutes (or slightly less time if already looking brown). Stir in the baking soda and gently stir until light and foamy. Quickly pour the foamy mixture onto the greased cookie sheet.

  6. Do NOT use a spoon to spread the mixture around. Instead, gently rotate the pan to spread the mixture around until it is about ½ inch thick. Work quickly, because it will begin hardening very quickly.

  7. Let the peanut brittle cool for 15-30 minutes until it is hard and smooth to the touch. When it is cooled, break the candy into small pieces and store in an air-tight container.

Notes: It is okay if the peanuts have some peels. Make sure your microwave is 1000 Watts. Soak your glass bowl in soap and water and it will clean easily. It's easy to make several batches of this peanut brittle in the microwave for gifts.
