Isidrio's Enchiladas

 


Serves: ~4 people 
Total Time: ~15 minutes

Ingredients:
1 can enchilada sauce
1 package Queso Fresca
36 6-inch corn tortillas
Canola oil (or other oil)
1/2 cup chopped onion
shredded chicken or scrambled egg (optional)

Instructions:
1. Warm up the enchilada sauce
2. Sauté the onion (optional)
3. Cook the tortillas on a griddle or pan with a little oil
4. Mix the cheese and onions in a small bowl (optionally add chicken or egg)
5. Fill the tortillas with the cheese and onion mix and roll up tightly on a plate
6. Pour the enchilada sauce over the rolled up tortillas and sprinkle with more cheese
