Warm Hummus
One can garbanzo beans partly drained
2 garlic cloves (squish to remove skin then chop)
Olive oil (pour for about 5 seconds)
Juice of 1 lemon
Salt
Cumin
Coriander (optional but helps with bean digestion)
Cilantro or parsley for garnish (optional)
1 TB Tahini (optional but yummy)
Serve with: pita bread, pita chips or tortillas, toast, bagels, carrots, celery, mushrooms, mini sweet bell peppers tomatoes or lettuce/spinach
1. Boil beans briefly while chopping garlic
2. Mix everything. Mash with fork or potato masher if desired. Some people put it in the blender but that is not required for this hummus recipe.
3. Serve hot and top with a little parsley or cilantro garnish
Notes: This is a super quick and healthy lunch / dinner or a nice appetizer
