Homemade Tortillas

Homemade tortillas

Total time: ~30 minutes

Yield: 8 tortillas

Ingredients:
2 cups white flour
1/2 cup whole wheat flour
1 tsp. salt
1 tsp. yeast or baking powder
2 TB vegetable oil
1 cup warm water

Instructions:
1. Mix wet ingredients in a large bowl. Mix dry ingredients separately and then add to wet and stir and knead to form a not too sticky dough.
2. Separate into 8 equal sized balls.
3. Roll flat on a lightly floured surface. (I do about two at a time).
4. Cook each side briefly in a hot griddle or pan until speckled light brown. If they are not bubbling up the pan is probably not hot enough. If they stick you can use oil or non stick spray.

Notes: You can use all white flour you'll just need a bit more than 2 1/2 cups. If you use baking powder the water doesn't need to be warm. Goes well with tacos, chili, hummus or daal khichdi.
